How to prepare zucchini rolls

Zucchini It is a very refreshing vegetable and typical of spring, but today it can be found almost all year. It can be used as a vegetable, side dish or starter dish. It is a very advisable food for all ages especially if it is pureed. Below we explain how to make zucchini rolls.

You will need to:
  • 1 egg
  • 75g Of flour
  • 50 ml of sparkling water
  • 2 zucchini
  • 250g liver pate
  • 1 onion chopped into very small pieces
  • 70 g chopped walnut
  • 2 tablespoons pine nuts
  • 1 glass of olive oil
  • 1 tablespoon sesame seeds

First turn on the oven 180ºC. Then mix the egg with the flour, add the water and season with salt and pepper.

With the preparation make small strips on a nonstick board. Bake for 5 minutes.

Wash the zucchini, cut them into thin strips and soak them in boiling salt water. Remove them and immerse them again in cold water.

Prepare the filling. Mix the liver pate with the onion and the nut. Apart, brown the pine nuts in the oil, add the sesame and vinegar.

Spread the zucchini slices, slightly overlapping, on a sheet of sticky film.

Fill with liver pate and roll, pressing with the adherent film. Join the ends to get a roll. Cut into pieces and serve the rolls with the crispy strips and sauteed pine nuts.

Present the zucchini rolls with some crushed natural tomato.
